Ingredients: 
1 Egg 
½ c. Canned pumpkin 
1 ¾ c. Low-fat milk 
2 tbsps. Vegetable oil 
2 c. Flour
2 tbsps. Brown sugar 
1 tbsp. Baking powder 
1 tsp. Pumpkin pie spice 
1 tsp. Salt 

Directions: 
1- In a mixing bowl, mix milk, pumpkin, eggs, and oil. 
2- Add dry ingredients to egg mixture. Stir gently. 
3- Coat griddle lightly with cooking spray and heat on medium.
4- When the griddle is hot, spoon (using a dessert spoon) batter onto griddle. 
5- When bubbles start bursting, flip pancakes over and cook until it’s a nice golden-brown color.
