Ingredients: 
1 tsp. Salt 
2 oz. Vegetable Oil 
2 oz. Onion 
1 tsp. Scotch Bonnet Pepper 
4 oz. sliced Carrot 
1 bundle Spinach 
1 tsp. Black Pepper
4 oz. tomato 
1 oz. green Onion 
1 tsp. Thyme 
1 tsp. unsalted butter 

Directions: 
1- Add your oil, carrots, pepper, and onions to a skillet and sauté until soft (for about a minute). 
2- Add Spinach to skillet and season with salt and pepper to taste. 
3- Cover and allow to cook for another 3 minutes. 
4- Add your remaining ingredients to your pot allow to cook until spinach is tender (about 3 minutes longer).
